This dish seriously took me less than 10 minutes and I only used three things: my veggetti, a zucchini and store bought pasta sauce (any organic one will do)! It’s the perfect meal since I get home pretty late and I’m in no mood to whip up an elaborate meal.
Before I did anything else, I put a pot of water on the stove and turned the heat on high so that it would boil. Unlike conventional wheat pasta, I didn’t add salt because the pasta sauce already had enough seasoning.
While the water was heating up, I spiralized one zucchini. I had originally wanted to make two, but one of them had mold on it (yuck).
I used my veggetti (click here for link to buy, I bought mine at Bed Bath & Beyond for $14.99, but Amazon is cheaper if you have prime shipping) on the whole thing, until the zucchini got too short twist.
When the water was almost boiling, I dropped the zucchini in the pot and let it sit for about 3 minutes. The next time I do this, I’m going to leave it for less because the zucchini got a littler softer than I would have liked.
After I strained the water, I heated up my pasta sauce in the same pot, and added my zucchini back to the heated up sauce. I had to put some broccoli in it, too because there wasn’t enough of the zucchini pasta (stupid mold).
You can add cheese or anything else to top it off, but I liked it just the way it was.
